Egg Foo Yung - Simplified



A wee bit involved, but you can do it!! 


Serves 2 (4 nice sized patties)
Patties:
1/4 cup chopped green onion
1/4 cup chopped or slices water chestnut
3/4 cup bean sprouts, fresh or canned
1/4 bamboo shoots, finely sliced or chopped
2-3 nice mushrooms, sliced

6 eggs
3/4 teaspoon soy sauce
3/4 teaspoon oyster sauce

oil for frying

Sauce: 
2.25 tablespoon cornstarch
1 teaspoon beef bouillon granules, to taste -enough for water amount
3/4 tablespoon oyster sauce
1.5 cup cold water
1.5 tablespoon soy sauce

Use a smallish frying pan to get patties the size you want. 

For sauce; combine sauce ingredients in a small saucepan. Cook and stir over medium heat until thick and bubbly. Cook 1-2 minutes more. Keep it warm while you fry up the Egg Foo Yung.

In a mixing bowl, beat together the eggs, soy sauce and oyster sauce. For the vegetables, I combine them on a dinner plate and separate into 4 little piles. When I'm ready to cook, I heat the pan with a little oil and ladle in about 1/2 cup of the egg mixture and add in one of the veggie piles. I QUICKLY stir around the veggies to evenly disperse into the eggs. I use a chopstick, use what you have.   Fry a minute or so on each side, until golden brown. Remove from pan, keep warm under foil on a plate, repeat until you've used all your egg and vegetable mixture. Stir up the bowl before each scoop, to keep the mixture evenly mixed. Add more oil to pan as you need to. Serve over rice with your warmed sauce.

Feel free to add meats as you'd like to. Leftover cooked chicken, ham and shrimp are all great additions. :D

Collect your ingredients and have them all ready before heating your pan. 
It goes quickly once you start and everything needs to be ready to toss into the hot pan. 


Eggs go into a bowl big enough to beat. 


Start your sauce first before making patties. 


Add soy sauce and oyster sauce to eggs and beat together. 


Use what veggies you can. If you can't find something, it's okay. 
Skip it or substitute something else. 
I can't always find what I'm looking for, here in France. I improvise. 


I divide the veggies into portions so I evenly share them between the 4 patties. 


My Honey likes mushrooms, I don't care for them. 


Sauce looks perfect. it cleared up and got thick. Now, just keep it warm.


Eggs are beaten. 


Pour sauce over and enjoy!

Fried Rice


Cold rice, 3 cups or so
1 large egg
soy sauce
Optional:
cold leftover meat (chicken, pork, shrimp)
green onion
mushrooms
snow peas
carrot
White Pepper


Into your frying pan, pour about a tablespoon of cooking oil and your cold leftover rice. Turn this over and over in the pan until you hear it starting to cook. While you are waiting for your rice to heat up, cut up the optional ingredients that you'll add. I had a leftover chicken thigh, a few snow peas and a carrot. I chopped the meat and snow peas and grated the carrot. Pretty much everything that goes into fried rice is already cooked, so you don't have enough cooking time to cook thickly cut carrots. They would stay raw. So, grated is a good way to get some color without slowing down the cooking time. Once the rice seems to be heated and not cold anymore, add a nice sprinkling of soy sauce, not too much, you can always add more at the table. Mix that in gently. Add all the chopped additional ingredients and turn over and over to fold into the rice.


Make a well in the center of the pan of rice. Whip up the raw egg, like you're making scrambled eggs. Pour it into the well and stir until nearly set. Fold it into the cooked rice. The only thing I add at this point is a quick sprinkling of white pepper. 

One key to making Chinese food is having all of your ingredients ready to roll. Pre-cut and chop before the pan is hot. Cooking is the quickest part of Chinese cooking.

Additions all cut up, ready to go.

Cold rice in the pan, a little sprinkle of soy sauce.

After rice is hot, add the optional ingredients. Check and see what leftovers you have that can be added! Be creative!


 I bet you thought I forgot about that egg! 

Back to that egg... whip it good! Where's my DEVO hat?

Make a well in the hot rice.

Pour whipped egg into the well.

Stir the scrambled egg until it is nearly set.

Then stir the egg into the rice.

A little white pepper and the rice is done. 
Just leave it in the pan until serving time to stay hot.

Bacon Chicken Alfredo


Bacon Chicken Alfredo

A meal made with whatever jumped out at me this evening! And it turned out QUITE delicious!!








Gather your ingredients, bacon, chicken, pasta, Alfredo sauce. I also added some leftover broccoli and some sliced scallions. 


Cut up your bacon and add to large frying pan. 
Cook until well done and starting to get crispy.

There, that's ready. If your chicken is cut up, go ahead. Otherwise, turn off the heat for a few minutes. Scoop out that golden nectar of bacon fat for another use and store in the refrigerator. 

Cut your chicken into bite-sized pieces. 

Add raw chicken to cooked bacon and continue frying until chicken is fully cooked.

I added some sliced scallions. Feel free to add other veggies, perhaps bell peppers and mushrooms.

I also prepared some cooked leftover broccoli. I did not add it with the onions because it was already cooked. I did not want to overcook it, just warm it up. So, I sliced it up a bit and had it at the ready. 

This is a quickie meal, so I used jarred sauce. If you have time, make your own, if you'd like. 

Once the sauce was heated through, I added the cooked broccoli and folded it gently into the sauce. 

Served here over linguine. Use what you like. :) It was delicious!!
