Steak Soft Tacos


1-2 pounds beef tenderloin, skirt steak, flank steak, or flat iron
2 large onions
Balsamic vinegar
Lemon juice
Garlic
Olive oil
S&P

Tomatoes
Lettuce
Cheddar

Soft Tortillas

Thinly slice the beef and marinade in:
3 Tablespoon minced garlic
2 Tablespoon balsamic vinegar
2 Tablespoon lemon juice
1 Tablespoon olive oil
S&P

Allow the meat to marinade, stirring every once in a while for an hour, or while you are readying the balance of the meal.

Slice onions and gently simmer in enough water to steam to tender. To this, I add about 1/2 stick of butter, and a healthy dash of pepper. The onions will take the better part of an hour to cook this way. So, don't wait till the end to get them cooking.

While these things are working... Cut up your tomatoes, lettuce and cheddar. If you are making another side with the tacos, prepare it now.

When the onions are about done, get the skillet hot and stir-fry the meat, adding all the marinade to the pan. There shouldn't be much. Cook over high heat to keep it becoming soupy.

To serve, simply pile goodies to your liking onto warm pliable tortillas. On mine, here, I put onions on first, then cheese and meat with tomatoes and lettuce on top. I put salsa on the side and added A1 to mine. It was quite good! 

Get everything you need, out and ready.

Add some water and get them simmering. The onions get SP sweet...

Most of the time for this meal is spent waiting while the onions cook. So, empty the dishwasher, put away the dishes, cut up the tomatoes and lettuce and then check the onions. Yeah, almost done. Time to cook the steak.

Spread the sliced steak into the pan to get it cooked as fast as you can. This is a good cut of meat, it doesn't have to be cooked to death. Quick and hot! It's done when there is just a TOUCH of pink still visible. Don't overcook.

Build your tacos! These are burrito sized tortillas. They will get folded up burrito style to eat neatly. Or maybe cut with a knife and fork. They are tasty!!
