Mini Florentine Cups

*Healthier Appetizers*

A new use for your mini muffin pans!

10oz. frozen chopped spinach, cooked and well-drained
1/2 cup shredded Mozzarella Cheese
1/3 cup cream cheese spread, or cream cheese with a few drops of cream to thin
1 Tablespoon grated Parmesan Cheese
1 Tablespoon finely chopped onion
1 garlic clove, minced
24 slices shaved oven roasted turkey breast lunchmeat

Preheat oven to 350*F. Mix all ingredients, except turkey, until well blended. 

Flatten turkey slices, place one slice in each of the 24 muffin pan cups. (My mini muffin pan is no-stick. You may need a quick spray of oil spray.) Fill each cup with 1 1/2 teaspoon of the spinach mixture..

Bake 15 minutes or until heated through, serve warm. These can be assembled ahead and held, covered in the fridge. Just uncover and bake when needed!
