Braised Ginger Pork

Jonathan's requested Birthday Meal! These birthday pictures are from 2009. 

1-2 lb. pork loin, cubed
cooking oil
1/3 cup soy sauce
1/4 cup dry sherry
1 onion, chopped
1 small can chicken broth
2 clove garlic, chopped
2 Tablespoon sugar
2 teaspoon ground ginger
1/2 teaspoon black pepper

Hot Rice

Start your rice first. By the time it's done, dinner will be too!

Dredge meat in flour and brown in hot oil. Once meat is browned all around, add onions to pan. Stir in and let them soften. 

Add soy sauce, broth and sherry. Add spices. Bring to boil. Lower heat and simmer, covered, for 15 minutes. This should end about the time your rice is done. 

Enjoy! Couldn't be simpler! When I take this meal to someone who is housebound for one reason or another, they always beg me for the recipe.

 One hunk o'pork loin. And a waiting bag of flour. :D

Pork is cubed and waiting for a good flour dusting.

Okay, ready to be fished out of the flour...

Into the hot oil they go.

You can just tumble them around with your spoon, but I actually find I get better all-around browning if I flip them over with a teeny seafood fork.

Add in the chopped onion once the pork is evenly browned.

Our very simple but rewarding spice selection. Ginger, sugar and black pepper.

In go the spices...

Soy sauce and sherry.

Add the broth.

Bring to a boil. Lower the heat and simmer, covered, for 15 minutes, 
or until the rice is done, whichever is longer.

YUM!
