Roasting Charts

*A Tiny Tip*

Everyone should be familiar with Roasting Charts. For those who are new to cooking, and I LOVE that I have many young fans here, it is important to know that meat has been cooked to a safe temperature. Nothing will ruin a dinner faster than making everyone sick with undercooked food. 

When I first started cooking, I cut a chart out of a magazine somewhere and kept it taped to the inside of a recipe file. Here is a government site that you can visit and check out. Might I suggest that you go ahead and print a copy to tape up inside a cabinet in the kitchen. Unfortunately, since this is a US government site, it is in Fahrenheit, not Celsius. Let's see what we can find for our metric friends. :)

This is an instant read thermometer. You stick it in and take it's temperature. You DO NOT leave it in the meat as it cooks. You CAN buy one you leave in that has a digital readout on the counter, but it's not an average gadget, and it's not cheap. This one is about $9.95.
