2 cups flour
1/2 teaspoon salt
1 cup cool water
3 Tablespoon olive oil

In a large bowl, mix all ingredients. Turn onto a flour dusted counter. This will be sticky. Have more four at hand to add.
Knead a few minutes, adding flour to keep from sticking. Once you have a soft, but not wet dough, you are done kneading.
Cut ball of dough into 8 small balls. At this point heat frying pan on medium heat. Spray with oil (Spray when holding pan away from heat, then return to heat).
Roll each out into a roughly 7-8 inch round. Roll one and put into pan..... as one fries, roll out another. If you roll them all at once, they'll stick together. Rolling and cooking takes about the same amount of time.
Fry one at a time, about 1 minute on each side. While one is frying, you are rolling out the next dough ball.
Once fried, remove to a dish to keep warm. I cover them with foil. :)
If you don't use them all at one dinner, they keep beautifully in the fridge a few days or even up to a month in the freezer. Thaw frozen tortillas in fridge before using.

Water

Mix well

Plop out onto floured counter to knead.

Once kneaded, cut into 8 smaller dough balls.

Rolled out balls into rounds.

The rolled out rounds are about 7-8 inches across.

Spray hot pan with spray oil. Do not spray while pan is sitting on the stove.
I hold my pan over the sink and spray and then bring it back to the stove.

Fry one minute on each side.

Place fried tortillas into a dish to keep warm. I cover them with foil.
