Sun-Dried Tomato Hummus

* Healthier Appetizers*

A little sweet with the sun-dried tomatoes. Very tasty!

15oz. can chickpeas, rinsed and drained
7 oz. jar sun-dried tomatoes in oil, drained and roughly chopped
1 clove garlic, chopped
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
2 Tablespoons lemon juice
1 teaspoon chopped fresh basil
a good shake of ground cayenne pepper

In a food processor, combine the chickpeas, tomatoes, garlic, mayo, cheese, lemon juice, basil and cayenne. Process until smooth, stopping to stir once or twice. Serve with pita bread wedges and baby carrots. 



Gather everything.



Chick Peas, or Cici Beans



Rinse beans and drain well.



I did not have any dried tomatoes in oil, so I soaked dried tomatoes in boiling water, after cutting them up with scissors, till softened, then drained them.



Drain well, tap strainer so you don't carry water over. It would make your dip runny. :( If you use dried tomatoes like these instead of the oil soaked tomatoes in a jar, add a teaspoon of olive oil, like I did.



Everything is in there except the mayo. I'll add that and then run the food processor on high till smooth and blended well.



Add a little garnish and you are ready to serve!
