Spinach Cheese Dip

I worked on this recipe a very long time. My family just went wild over this hot cheese dip at the Mexican Restaurant every time. I HAD to recreate it! This is what I came up with. 

1 pound deli white American Cheese, cubed
16oz. carton Half & Half
Small box frozen chopped spinach, thawed and well drained
1/4 teaspoon salt
1/4 teaspoon cumin

Your favorite tortilla chips

The deli cheese is found in your grocery store deli, like you would have them cut you freshly sliced deli meats, have them cut you fat slices of their (most likely Land O'Lakes) White American Cheese. 

Cube the cheese and put it into a saucepan to melt over very low heat with 1/4 cup of the Half & Half. Once all is smooth, add salt and cumin. Add more Half & Half to make it quite thin. It will thicken as it cools. Add your well-squeezed spinach. I added about three good sized handfuls. It wasn't the whole amount of spinach from the box. 

You can keep this warm in a small crock pot dip warmer, but keep an eye on it. Mine wanted to burn it after a while. Or serve it in a preheated ceramic bowl, like they do in the restaurants. 

While you are making the dip, the ceramic bowl as well as the tortilla chips can be in the low oven warming.
