Mandarin Chicken

Too Easy!!

1-2lb. chicken, cut up
1/3 soy sauce
2 teaspoon Chinese Five Spice powder
1 can chicken broth
1/2 teaspoon cayenne, or to taste

Hot Rice or Udon noodles to serve over
**********************************

Saute cut up chicken until thoroughly cooked. Add spices and soy, then add broth. Cook 5 minutes longer.

Honestly, couldn't be simpler!

I served over Udon noodles with sautéed spinach on the side.

Sautéed spinach is simple too. Just add frozen spinach to skillet with a bit of oil, S&P. Stir every now and then till it's cooked threw. MUCH simpler than even boiling and straining, etc.

Just a few ingredients. Start the chicken cooking and get a pot of water on to boil for the noodles, or have rice cooking.

Spices measured out.

Udon noodles need to cook for ten minutes, so I start them now that chicken is almost cooked.

Chicken is done, spices go in.

Soy Sauce.

Chicken Broth.

Served with Udon noodles and sautéed spinach. Remind me next time I use this plate, to put the white noodles on the dark side of the plate and the dark meat on the light side of the plate. LOL!
