Amish Baked Chicken

I have no idea why this is named what it is. But this is what I've called it since I got the recipe. It's tender and delicious. An easy meal that every loves!!


Chicken thighs, with bone and skin
(this will coat ten thighs)
cooking oil

Mix together in a gallon sized baggie:

1 cup flour
1 teaspoon salt
2 teaspoons black pepper
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon marjoram

P.S. I make up a jar full of the spice mix and have it on hand for when I want to make this dish.

Preheat oven to 375*

Pour 2/3 cup oil into a shallow roasting dish. Turn chicken pieces into oiled pan, coating them completely in oil. Remove from pan and put them into the large baggie containing flour and spices. Close the bag and shake it all to coat oiled chicken well. Remove chicken one piece at a time, folding skin nicely over thighs and place back into oiled pan, skin side up. Arrange nicely in a single layer.

Bake at 375* for 45 minutes. After 45 minutes, turn them over skin side down. Bake another 15 minutes. The chicken is done at this point. If you aren't in a big hurry, flip them back over, skin side up and give them another 5 minutes, or until the table is set and ready to go. They can easily stay in the oven another 15 minutes, no rush. They just get a little crispier on top. I like that.

Serve as is, or remove chicken from the pan and make gravy from the drippings. Everyone loves this recipe. The chicken is tender and moist and very tasty!

Everything into the baggie.

Mix the flour and spices well. 

Take a piece of two of your oiled chicken and put them into the baggie of flour.

Don't overload the baggie.

Shake them up and get the chicken covered in the flour mixture. 

Please the chicken pieces into the baking dish, skin side up. 

Only a single layer.

And into the preheated oven it goes!

After 45 minutes, flip them over, skin side down. Bake another 15 minutes or so. 
If you are feeling energetic, the oil and drippings in the pan make a wonderful gravy! 

A very nice comfort food type of meal.
