Chicken pieces, boneless
Flour for dredging
Oil
Butter
Lemon juice
Parsley
Spaghetti for serving
Hot cooked broccoli
***************************
Dredge chicken in flour, brown thoroughly in equal amounts of oil and butter (I used 2 Tablespoons each). When chicken is well browned, remove from pan and keep warm. To the pan, add equal amounts of butter and lemon juice (I used 3 Tablespoons each). Swirl around until mixed and smooth. Stir up any browned bits of chicken into sauce. Add about a heaping Tablespoon of parsley to the butter sauce, stir in.
Spoon sauce over chicken and cooked spaghetti. I also make plenty of sauce so that I can put sauce over my broccoli. :)
