Chinese Szechuan Chicken

A restaurant favorite! 

Chinese Szechuan Chicken
Boneless chicken, cut into bite size pieces

Marinade:
2 Tablespoons soy sauce
2 Tablespoons dry sherry
2 teaspoons cornstarch
1/4 teaspoon sugar
1/4 teaspoon ground ginger
1/2 teaspoon crushed red pepper (or more)
1 clove garlic, crushed

6 green onions, sliced
2 medium bell peppers, I used red ones
I also added snow peas, it can be optional

1/2 cup dry roasted peanuts (I did not use)

Slice up chicken and mix with marinade ingredients. Set aside.

Cut up your green onions and bell peppers. Those who look closely at the pictures will notice that I regularly use pre-sliced, frozen green onions and bell peppers. I but a bag full and chop and freeze. That speeds things up at dinner prep time on week days.

Put rice on to cook. 25 minutes from now, dinner will be on the table.

When rice is 15 minutes from done, heat oil in pan. Pour in chicken and marinade, stir-fry till almost done.

Add vegetables in order of how long they need to cook. Snow peas need more time, I add those first. 5 minutes... then add pepper slices, 5 minutes, then add green onion, 5 minutes and it's done. Before this is quite done, the timer on the rice will go off. Just pull it off the heat and let it sit until the stir-fry is done.

Serve over hot rice. Sprinkle with peanuts, or as I did, sesame seeds at serving time.

Set the timer for 20 minutes and don't peek.  If it starts to look like it'll boil over, lower the heat a bit, stir it down quickly and get that lid back on.

At the last minute, I decided to add some snow peas I picked up at H Mart today. So, here they are trimmed and ready to cook.

Rice is done.  Sticky rice.  Easy to pick up with chopsticks. Long grain white rice just won't cut it for Asian foods.

Stir-fry.  For those of you new to cooking, that literally means, fry it while stirring. This is a hands-on method, don't go anywhere.  This is not to the time to go watch TV or check email.

OK, this is done. See how juicy it gets after the veggies have cooked.  The juice all came from the veggies.
